Gluten Free Sweet Potato Gnooci

Yesterday, I decided to be adventurous and make homemade gnocchi. Well I would say  that this recipe was a great success. In my terms of success it means I will eat the leftovers or even make the recipe again. This recipe was so good I even tried to persuade myself it was healthy enough to eat as breakfast. Here is how I made the recipe;

Step 1: Gather the 3 ingredients together( 2 eggs, 6 small or 3 medium size sweet potatoes, and one box of Betty Crocker gluten free flour)
Step 2: Poke sweet potatoes with fork about 3 times and place them the microwave for approximately  10 minutes.
Step 3: Take the sweet potatoes out of the microwave with a oven mit ( make sure they are squishy  to the the feel )
Step 4: Let the sweet potatoes cool or until you can touch them without burning your fingers( aka I got to impatient and burnt my fingers)
Step 5: Take the skins off of the sweet potatoes and throw away the skins. Then  put the potato part into a bowl and mix it up.

Step 6: Add the 2 eggs and 2 cups of the Betty Crocker gluten free flour to the sweet potatoes.
Step 7: Make sure the mixture is mixed really well( might have to add 1/2 cup more of flour to make sure the mixture is not to sticky)
Step 8: Take a one teaspoon measuring
spoon and roll that amount of dough into a ball in your hands.

Step 9: Roll the ball of dough in a bowl (that should have the rest of the bag of flour in it). This step is to  make sure the dough does not stick to the other balls you make)

Step 10: Push a fork on top of all of the balls to make a textured
look on one side of the dough

Step 11: Take the Gnocchi out of the fridge.
Step 12: Boil a medium sized pan worth of water.
Step 13: After the water is boiling add the gnocchi.
Step 14: When the gnocchi starts to float it means that the gnocchi is done.
Step 15: Strain the gnocchi.
Step 16: Add whatever you are in the mood for to compliment these delicious gnocchi. In the picture it is spaghetti sauce and Parmesan cheese. I would also suggest olive oil and fresh garlic
Step 17:  ENJOY!
